Greek Pasta Salad

I know I haven't posted in awhile, I've been busy with the whole single mom while active duty in the military thing, you know how that goes. Anyways, I'll try my best to do better and make biweekly posts at least. The operative word in that sentence being "try", again, the single mom while in the military thing...

This year for the July 4th weekend the dude smoked a brisket and finished it off the grill (I'll try to steal his recipe and post it here - it was to die for!) so I figured why not try a grilled dessert since we had that going

You'll need:

- 1lb box rotini pasta, cooked al dente and drained
- 1 green pepper
- ½ cup diced mozzarella (unless you're like me a love cheese)
- ½ feta crumbles
- 1 roma tomato
- ¼ - ½ julienne fresh basil
- Greek vinaigrette dressing
- I threw in a handful of minced pepperoni because my picky 6yr old wouldn't eat it unless I did


Combine all the ingredients except for the vinaigrette in a large bowl until well mixed. Or have your 3yr old do it so you can have a quick adult beverage.



I purposely didn't say how much vinaigrette to add because that all depends on how wet people like their pasta salad to be, just beware that since the pasta was cooked al dente it will soak up quite a bit of the dressing.

Grilled Peaches

This year for the July 4th weekend the dude smoked a brisket and finished it off the grill (I'll try to steal his recipe and post it here - it was to die for!) so I figured why not try a grilled dessert since we had that going

You'll need:

- 2 tbsp sugar
- 1 tbsp cinnamon
- pinch of salt
- 4 ripe peaches
- canola oil (enough to brush the peaches before placing on the grill)
- mint leaves to garnish

In a medium bowl, add slightly melted butter and stir until smooth. Add the cinnamon, sugar, and salt and stir until mixed.

Halve the peaches and discard the pit. Brush the peaches with canola oil and place on a grill set to high heat. Grill until they are cooked through, top with the butter mix and garnish with mint. Add your favorite ice cream for an even sweeter treat!
